Hvar Chef Review - Joint 5Oth Birthday Party

My friends & I have just enjoyed the most amazing week in Jelsa on Hvar Island, celebrating our joint 50th birthdays. We enjoyed many fantastic dining experiences, but the best was definitely left ‘til our last evening on the island when I arranged for Hvar Chef to prepare their Croatian Signature menu for our party of 10 in our private villa. From start to finish their approach was first class - the guys arrived two hours before service to set up the table & prepare everything fresh in our villa kitchen (whilst we were

simply left to enjoy the last few hours of afternoon sun around the pool). Appetisers were served at 19.15 - beautifully presented boards of cold meats, cheeses & olives accompanied by a couple of bottles of local Croatian bubbles - we were off to a great start & everyone took their places at the table with huge anticipation. Yvan continued to pair our own selection of wines with each course, but is equally happy to offer a wine service himself. As for the food, WOW, what a talented chef Alex proved to be, treating us to a tasting style menu of tuna tartare with fresh mint, truffle pasta with slow cooked egg yolk (risotto alternative for our gluten free guest) and seared amberjack with crunchy cabbage & citrus emulsion, but the piece de resistance was unanimously the most amazing dark chocolate soufflé infused with lavender! The guys then left the kitchen spotlessly clean like they had never even been there, though the memory of their most amazing service & food will live with us forever!
